Cinnamon Granola


I made another batch of granola, this time with 2 teaspoons of good cinnamon added.
So good.
I keep it on the kitchen counter in one of those ceramic kitchen essentials holders.
In about a week or so the batch you see is gone.
This time I used as follows:
4 cups old fashion oats
2 cups sweet coconut flakes
1/2 cup cranberries
2 cups slivered almonds
1/2 cups almond slices
60 ml oil
1/2 cup honey
2 teaspoons cinnamon
Tossed to combine in a big bowl and then spread it evenly in this baking sheet.
I baked it at 350 F for approx 25 minutes, stirring every 5 minutes.

  1. I wanted to make granola for a long time, as we both love it! But so far we ate only the bought ones. This cinnamon-tasting sounds great!
    Why do you have to stir it during baking? Will it still hold together at the end to be sliced into bars?

  3. Judith - this is the kind of loose granola, just like regular oats or like cereal in a box and I make it for my husband to eat with milk in the morning. I stir it so often because as you know, coconut can burn easily in the oven and because the granola at the edges and on the bottom tends to cook faster.
    I haven't yet thought of making granola bars, but you gave me a nice idea to think of.
