Video of Julia Child cooking Apple Tarte Tatin


With all the fuss going on these days about Julia Child and the movie about her life and her cooking, I thought it would be nice to actually see the master at work.
She is so funny and so captivating and her clumsiness makes you smile and keep on watching her cook just so you can see what she has figured out for repairing the damage.
Awesome !
And I think that this is how the beginning of televised cooking shows looked like.
Maybe on of these days I will make some apple tart tatin myself and I will post about it.
Wouldn't that be nice to see how Julia's viewers adapt her recipes?
On the website I found HERE there are also other videos of her recipes, and now that I have seen her I can say that Meryl Streep is the best actress they could have ever picked to portray Julia Child.

  4. I made the tarte tatin a few times before but yesterday I made it following one of Julia Child's most recent recipe and it turned out perfect!!
    The method I used is actually a bit different form what she shows in the 1971 video that you have the link for.
    Also, I lived in Paris for 5 years in the 90's and all the tarte tatin's that I have seen (and eaten) in restaurants and brasseries look more dark in color than the one in her video (this tarte is a staple in french cafes and bistros, just like apple pie a la mode or cheesecake is here in US). I think the trick is to start a caramel on the stove with the sugar and butter before you add the arranged apples. It's just a bit tricky because you are arrnaging apple slices on top of fire hot caramel, so be careful. That will do it and you will have a tarte tatin looking and tasting just like the ones in Parisian restaurants.

  5. That was such a nice comment you left - thank you. I have not made this because I am not such a big fan of the caramel that might hurt my teeth. However, I love anything with apple.
    The purpose of mentioning this link to the tarte tatin is because she was so funny how she tried to mend it towards the end after she splashed it onto the plate. A true professional would have not done that, so it was just a tad bit funny.
