Coconut Pastries


I think you can make these any time and really you do not need much ingredients-wise, as many of us would probably have all the necessary ingredients in the kitchen already.
Even though this dessert is filled with coconut, you can swap that for any other filling of your choice.
Ingredients:
one package puff pastry of your choice
1 cup of milk (2% or anything else)
1 cup of sugar (white or use Splenda instead)
3 eggs
1 cup coconut flakes
1/2 teaspoon orange or lemon zest
1/2 teaspoon vanilla extract
some powder sugar for garnish at the end

Directions:
Thaw the frozen dough and cut each spread sheet in 9 squares.
Bake the squares at 400 F for 10-15 minutes, until done.
Remove them from the baking sheet and cool them completely.
In the meantime, place all the filling ingredients in a medium size sauce pan and cook on medium heat until thickened,stirring often.
Let cool down and cut each pastry square in half, to open them.
Place a TBSP of filling in each one, close up and if desired, sprinkle powder sugar for garnish.
