Hearty Baked Potato Soup


So so so so good !
I have never had this kind of soup until this year when I tried it at a Panera Bread restaurant.
The taste was just to die for, but what can you do when you do not live next to that restaurant? The only option I see available is to try to make your own replica.
So this is what I did, and sure enough, the taste is very very similar.
So if you love this soup when you go out, give it a try, you'll agree with me.

Ingredients for a big pot of soup(if you just want to try it, go for half the first time):
4 big baking potatoes or 6-7 medium ones
6 slices of bacon or 4-6 slices of salamy or ham
1/2 cup butter
1 big onion, diced
6 cups milk
2 scant teaspoons salt
some pepper
1 and 1/2 cups cheese (try using cheddar, but if you don't have that, any grated cheese will do)
1 cup sour cream

Directions:
After you have baked the potatoes at 450 F for 50 minutes to 2 hours, depending on what kind of potatoes you have and how big they are, let them cool off, cut in half, scoop them and set the pulp aside.
You can mash the potato pulp a bit, just don't transform it into mashed potatoes.
Throw the potato skins in the garbage.
Now cook the bacon, salamy or ham until crisp and then cut into small pieces and set aside.
Place a large soup pot over medium heat and add the butter and onion and sautee for at least 5 minutes, until it softens.
Stir in the flour and cook for a few minutes not letting it brown.
Stirring constantly, add the milk a little at a time and bring it to a boil, until it thickens.
Add the potato pulp, pepper, salt, the meat and the cheese.
Now stir until the cheese is melted and then add the sour cream.
You're done !
Taste it and adjust it to your taste if you need more salt or pepper.
Now indulge !
