Chantilly or Crisp Foam Nests (with Whipped Cream and Roasted Strawberries)
As you have now found yourself with 8 egg whites that you really had no plan for, I think it would be a good thing to give this recipe a try.
It is very delicious and it isn't hard to do.
Ingredients:
For the Meringues:
8 egg whites
1/2 teaspoon cream of tartar
a pinch of kosher salt
2 cups sugar, divided
1 teaspoon vanilla extract
For the Whipped Cream:
2 cups heavy cream
2 teaspoons sugar
For the roasted berries:
1 to 2 lb strawberries (you can use just about any fruit you like)
1/4 to 1/2 cup sugar
some vanilla
You will need to start with the berries really as they need time to cool off and you will need the oven for the meringues.
So pick a large pyrex or non stick pan/sheet with rim that would hold the amount of fruit you have and place in it the washed and cut/halved fruit.
Add the vanilla and sugar and toss.
Place in a preheated oven to 450 F and roast for 20 minutes.
Let cool on the stove then transfer to a serving dish or a storage container/glass jar.
It will resemble fruit preserve or jam. YUM.
Now that you took care of the berries, you can focus on the egg whites.
Choose a large mixing bowl and place the ingredients in it, leaving the sugar out.
Beat on high for 3 minutes then add the sugar and beat for 4 more minutes on high speed or until very hard peaks form.
Transfer the meringue to a plastic ziplock bag fitted with a pastry tip (star) or just simply cut the corner and remember they do not need to be perfect.
Preheat the oven to 200 F and line 2 baking sheets with parchment paper.
You are now ready to pipe the nests onto the parchment paper, keeping in mind that you will need to end up with 16 nests, therefore pipe accordingly.
The diameter of the circles needs to be 4-5 inch and the nests should be maybe close to 2 inch tall.
Bake for 2 h 30 min and let cool off in the oven for 4 more hours or overnight, without opening the door.
When the 4 h have passed or when you are ready to feast, which can even be next day, whipp the cream, place some in the nests and add some berries.
