Creamy Mashed Potatoes with Italian Sausage and Caramelized Onion

I should probably let Jeff say how good these mashed potatoes were.
But since I am writing the post right now and he isn't home, I will go on saying they are so different and so yummy, that once you taste them, you will want to make them again and again.
Ingredients:
For the Sausage:
Use the fresh Italian Sausage you can buy at the store and fry it ,making sure you cut tiny slits into it for the steam and liquid to escape.
For the Caramelized Onions:
1 medium onion or 2 small ones, diced or cut into skinny strips
kosher salt
pepper
Sherry wine, 50 ml
some oil or butter for the skillet
Toss to combine then keep on medium-high heat and stir until they look beautifully caramelized and fragrant, adding the sherry a little at a time.
For the Mashed Potatoes:
2 big potatoes or 3 medium size ones, cut into small pieces and mashed
2 TBSP butter
2 heaping TBSP sour cream
salt
pepper
a splash of milk if needed
chopped parsley
After you mash them gently, add the other ingredients and stir.
Plating:
Put the onion on top of the mashed poatoes, sprinkle some cheese if desired and ad the sausage.
