Quesadillas for Dinner
Easy to make and so good !
Cooking them in the skillet will crisp up the tortilla surface and will melt the cheese nicely.
They keep well in the fridge and can be reheated for a quick snack in the microwave.
Ingredients:
2 tortillas (1 per person)
1/3 cup cheese per tortilla
1/3 bell pepper, diced
meat of your choice (I used sausage links)
Directions:
Top half of a tortilla with the ingredients, cover with the empty half and cook in a preheated non stick skillet for 2-4 minutes on each side - on medium heat.
Remove to a cutting board, cut in 4 and enjoy !
